Math Class

I begin my next Math class tonight.  I am anxious again.  I didn’t think I would be able to get through the first class, but I did.

Looking back to the beginning of my math book, everything seemed foreign.  A very strange language that was familiar but I had no clue what to do.  Now, still not completely sure of myself.  Self doubt reigns.  It is done.  First one done.  I conquered.  Ha.  Not really. Self doubt lingers.

As I look to tonight, I need to remind myself that the end will be here before I realize it.  That everything always looks worse for me at the beginning.  That I will conquer this class as well.  Then to the next one, right?

Anxiety has been worse the past couple of weeks.  Reminding myself of things to be grateful for helps.  I am grateful that I am able to go back to school at 50.  I am grateful for a math class to conquer.  Maybe.

Sunday Thought

If you have older children, I feel this statement is more than true.  My mom always yelled, but I think more of her yelling was that she was German. Ha. No, really.  I have yelled more for my kids than at them, I pray.

What do you want to yell about today?  Today, I am happy.  Feeling grateful for my roof (that needs repairing), refrigerator that is full (still need to shop, and meal prep), clean running water (need to drink more of), a comfortable, warm place to sleep (not under a bridge or without a home), and my family (that I irritate most times).  Grateful.

We should yell more about what we are grateful about than what we don’t have.  Or maybe even yell for those who can’t use their voices.

We have been working on the craft room, and am a little rushed for an event for the evening.

This will be framed, but for now Saturday inspiration.

Pork Rinds

The one thing I have missed the most with my gastric sleeve is crunchy things.  Chips, you know, those bad things.

I found some wonderful things on Bariatric Eating website but absolutely love these microwaveable pork rinds.

Sprinkle some on a paper plate, microwave for a minute.  They are fresh, and a little warm. I can cook as much as I want or make some in advance.  They satisfy my crunch needs, well wants.  I do sometimes sprinkle some BBQ seasoning on them when I eat them just as is.

These are so much better than the bags in the store.  (My opinion only!)  And, for one ounce serving…23 grams of protein!  Score!!

9 Month Check

Officially it was my 9 month surgery anniversary on the 16th of this month.  I had my nutritionist check up today (a week late).

I am 120 pounds down.  I started at my heaviest at 315lbs.  I am 195lbs!!  So excited.  The picture on the right is from today before our walk.  The picture on the right is from two days before surgery in May.  I weighed 283 pounds.

I am down from 26-28 clothes to 14-16 depending on the brand.  I am really good with my tool so far.  I still have a way to go, but thrilled with my progress.  Getting healthy has been the biggest goal, and I am on my way.

This picture was after our walk.  We did the route for the upcoming 5k.  We did better on time, and I am thrilled that we weren’t slower. I am almost 20 pounds down from the last 5k, so that should be a benefit to our time as well.

Special K Crustless Quiche

Have I told you how lazy I am lately?  Well, not really lazy.  I just like to have things cooked for me.  No effort.  Most things that I cook are easy or convenient lately it seems.  With the Gastric Sleeve surgery, and the amount I can eat, even more so.  As it seems like a waste to cook what I used to cook, and not be able to eat it all.

David found these Special K Crustless Quiches at Publix in the freezer section.

The sausage, quinoa, peppers, mozzarella & Asiago cheese is my favorite.  (Strictly my opinion.)  They are the perfect size for my sleeve (100 grams), filling and with 11 grams of protein a perfect meal or snack.  (Two come in a box.)

I know that I could just as easy cook some sausage, add peppers, cheese and egg in the same time it takes to microwave this.  But with these I don’t have to.  Plus this way I don’t waste the sausage and peppers etc from going bad.  I may try to meal prep something like this in the future, but for now, these work for me.

Craft Room – Part 2

Progress, right?  The window wall is the darker of the two shades of grey that we chose.   It seems that we always take pictures later in the day.  I will try to be better about the pictures.  But, I love the contrast of the colors with the bright white of the doors, and trim. David is doing all of the work due to my schedule with class and work.

More to come, just wanted to show the update so far.

Meatball Sandwich

We had leftover meatballs in marinara sauce, and I had the thought of getting some type of rolls to make sandwiches.   I can’t eat the bread, so it was for Stephen and David.  David loves the meatball sandwiches at Subway, so why not? I sliced the bread in half, heated up the meatballs, and placed them in the middle, covered it in mozzarella cheese.  Broiled them until toasted.

They loved them.  Super easy, resourceful, and we finished the meatballs.  I just had meatballs with cheese on them without the bread.  I could only eat 3 1/2 of the meatballs, but it was yummy to have the cheese.  Felt like I was cheating.

I loved that we were frugal with this meal as well.

Sauteed Spinach

I have been addicted to sauteed spinach since surgery (well, when I was able to add vegetables to my daily intake).  It is easy to make, and easy on my stomach.  Basically I cheat with the garlic and use jarred minced garlic.  I also get a large tub of baby spinach as it keeps well in the refrigerator.

I add about a spoonful of garlic and two tablespoons of olive oil to a hot pan.

Then add several handfuls of spinach.

I add some salt and pepper.  Stir every couple of minutes until the spinach wilts, and the garlic turns a little brown.

I store the sauteed spinach in the refrigerator to use whenever I eat dinner for the week.

What is your go to vegetable?  I love that this only takes about 3 minutes total to make from start to finish.  Even if you use a fresh garlic bulb, mincing that would only take a minute or two max.

Super yummy, and simple to cook.
