Pork Rinds

The one thing I have missed the most with my gastric sleeve is crunchy things.  Chips, you know, those bad things.

I found some wonderful things on Bariatric Eating website but absolutely love these microwaveable pork rinds.

Sprinkle some on a paper plate, microwave for a minute.  They are fresh, and a little warm. I can cook as much as I want or make some in advance.  They satisfy my crunch needs, well wants.  I do sometimes sprinkle some BBQ seasoning on them when I eat them just as is.

These are so much better than the bags in the store.  (My opinion only!)  And, for one ounce serving…23 grams of protein!  Score!!

Blessings!!

9 Month Check

Officially it was my 9 month surgery anniversary on the 16th of this month.  I had my nutritionist check up today (a week late).

I am 120 pounds down.  I started at my heaviest at 315lbs.  I am 195lbs!!  So excited.  The picture on the right is from today before our walk.  The picture on the right is from two days before surgery in May.  I weighed 283 pounds.

2017-02-23-19-25-59

I am down from 26-28 clothes to 14-16 depending on the brand.  I am really good with my tool so far.  I still have a way to go, but thrilled with my progress.  Getting healthy has been the biggest goal, and I am on my way.

2017-02-23-17-56-33

This picture was after our walk.  We did the route for the upcoming 5k.  We did better on time, and I am thrilled that we weren’t slower. I am almost 20 pounds down from the last 5k, so that should be a benefit to our time as well.

What 2017 goals are you keeping?

Blessings!

Special K Crustless Quiche

Have I told you how lazy I am lately?  Well, not really lazy.  I just like to have things cooked for me.  No effort.  Most things that I cook are easy or convenient lately it seems.  With the Gastric Sleeve surgery, and the amount I can eat, even more so.  As it seems like a waste to cook what I used to cook, and not be able to eat it all.

David found these Special K Crustless Quiches at Publix in the freezer section.

The sausage, quinoa, peppers, mozzarella & Asiago cheese is my favorite.  (Strictly my opinion.)  They are the perfect size for my sleeve (100 grams), filling and with 11 grams of protein a perfect meal or snack.  (Two come in a box.)

I know that I could just as easy cook some sausage, add peppers, cheese and egg in the same time it takes to microwave this.  But with these I don’t have to.  Plus this way I don’t waste the sausage and peppers etc from going bad.  I may try to meal prep something like this in the future, but for now, these work for me.

Blessings!

Meatball Sandwich

We had leftover meatballs in marinara sauce, and I had the thought of getting some type of rolls to make sandwiches.   I can’t eat the bread, so it was for Stephen and David.  David loves the meatball sandwiches at Subway, so why not? I sliced the bread in half, heated up the meatballs, and placed them in the middle, covered it in mozzarella cheese.  Broiled them until toasted.

They loved them.  Super easy, resourceful, and we finished the meatballs.  I just had meatballs with cheese on them without the bread.  I could only eat 3 1/2 of the meatballs, but it was yummy to have the cheese.  Felt like I was cheating.

I loved that we were frugal with this meal as well.

Blessings.

Sauteed Spinach

I have been addicted to sauteed spinach since surgery (well, when I was able to add vegetables to my daily intake).  It is easy to make, and easy on my stomach.  Basically I cheat with the garlic and use jarred minced garlic.  I also get a large tub of baby spinach as it keeps well in the refrigerator.

I add about a spoonful of garlic and two tablespoons of olive oil to a hot pan.

Then add several handfuls of spinach.

2017-02-12-16-29-59

I add some salt and pepper.  Stir every couple of minutes until the spinach wilts, and the garlic turns a little brown.

2017-02-12-16-32-18

I store the sauteed spinach in the refrigerator to use whenever I eat dinner for the week.

What is your go to vegetable?  I love that this only takes about 3 minutes total to make from start to finish.  Even if you use a fresh garlic bulb, mincing that would only take a minute or two max.

Super yummy, and simple to cook.

Blessings.

Walk

Walking.  I am trying to make walking a habit.  I love it when I actually go and do it.  It is just getting out there to accomplish it.  Habits take 21 to 30 days to form, right?  That’s what the experts say anyway.  Trying.

Yesterday evening, David and I decided to walk downtown Fort Walton.  I love this walk. We were going to follow the route for the 5k that we did in December to see if we could improve our time.  We decided, as we were walking, to go over the Brooks Bridge.   I was apprehensive because we had Dexter with us.  Well, and just in general as it wasn’t what we planned.  But I did it.

We got up to the top of the bridge, and David stopped to take these pictures.imag1133imag1135

What you don’t see is the traffic, the bridge bouncing, and wind blowing.  I couldn’t stop as I was handling Dexter, and really didn’t want to stop.  I love this view.   I love that this is where we live.   We got to the bottom, and went under and back over the bridge on the other side.  We did better on time than I thought, and it was a really good elevation for us to do.  Legs were feeling it.

Legs.  I have lots of skin issues with the weight loss, and need toning (in addition to more weight loss).  I really just want to be healthy.  I like where my body is headed, but don’t want to stop being active.  I knew that there were going to be skin issues.  And I know that my body is still changing and adjusting.  I just want it to look different now.  (Everything in its own time, right?)

This walk was perfect.  Tonight we are going to walk it again without Dexter, and hopefully improve our time.  Maybe I won’t be as anxious since we already walked it, and I know what to expect.

Do you stop to smell the roses along your way?  Thankful David did.  Thankful we chose to do this route.

Blessings.

Waffles, Bacon and WLS

Yesterday morning (Sunday) David states that he is wanting waffles.  He is the house waffle/pancake maker.  So I thought…YAY! Waffles, crap, I can’t eat those.  Then I remembered my protein mix.  I had made pancakes before with the Kodiak Cakes mix, why not try waffles.

(old picture)

David added an egg to the mix for added protein.  My serving below.

I ended up eating more of it than I thought.  I was drier than a regular waffle, hence the extra syrup.  Yummy.

It was a good Sunday.

How was your weekend?

Blessings!

Oven BBQ Chicken Drumsticks

I love cooking with my oven especially when it is cold.

I love chicken drumsticks or chicken thighs.  Dark meat is juicy, and is easier to process in my new stomach.

I love BBQ, well, store bought sauce, but I love the marinade that I have grown up with.  My Mom and Dad used to BBQ every weekend.

Simple marinade used on everything growing up, from pork ribs to Cornish hens to chicken.  McCormick’s Season Salt; Wishbone Italian dressing; and wine.  Red meat use red wine, white meat use white or rose wine.

So we had a family package of drumsticks defrosted.  So I marinaded them in the above for about a hour.  Then to the oven for a simple prep.  Foil lined baking sheet.  Lay the drumsticks out, and bake at 350 degrees for about 45 minutes turning over mid way through.

Then sauce with BBQ sauce.  Use your favorite sauce.

imag1077

Coat one side, bake for about 15 minutes, then turn and coat the other side.  Take the temp of the largest one to ensure proper temperature (165 degrees).  Then enjoy!

imag1097

We normally serve BBQ with rice and a vegetable.  Tonight I had a drumstick and a 1/2 of an avocado.  David had rice, and no vegetables.  But I am prepped for lunch and dinner for the week. Thank goodness.

Blessings!

The Scale

Ugh! I am so frustrated.  Truth in weight loss:  you will go up and down in the process.

Yep.  Back up at 202.6 this morning.  I haven’t been exercising as much as I should.  David and I walked last night, but overall not doing what I need to do on a daily basis.  So I know what I need to do to boost my metabolism.  Just doing it is the key, right?  Surgery is a tool, and only there when you do what you are supposed to do.

So…the scale.  Do you weigh every day?  Once a week? Never?  I have been weighing every day.  I think I need to change that.

Happy Friday!

Chickpea Rotini Pasta and WLS

It has been eight months since I had pasta.  Really longer than that due to my diet restrictions prior to surgery.  We went shopping at Sam’s Club last week, and discovered this Chickpea Rotini Pasta.  Protein for 3/4 cup serving size is 12 grams.  12 Grams!! I couldn’t eat that much.  I only added 1/2 cup to my meat sauce and Parmesan cheese.

It was so worth it.  Super yummy, had a nice bite to it. I couldn’t tell the difference from regular wheat pasta.  I will most certainly be having this again.  I love this pasta (strictly my opinion).

Enjoy!!
