Ho Ho Hustle Part 2

Ho Ho Hustle 5k is today.

The low is supposed to be below freezing, and the high only 44.  Last year was cold as well. It was 35 degrees when when finished.

That was my first Walking 5k that we did last December.  I hope to beat my time of 59:43 this year!

I DID!! 54:22!!!! Not my best but so happy!!

Lunch

My Mom used to eat canned, sliced pears and cottage cheese together all of the time for lunch or a snack.  I crave it every once and a while.  Today is one of those days.

Getting Back on Track!

So I have confessed that I have had weight gain the past several months.  Well, back up to 197 is not a good feeling!! I had been maintaining for several months, and as my friend Beth pointed out, maintaining is difficult to do.  At least I haven’t been gaining this entire time.

Putting on the weight has been very easy to do.  Getting it back off (especially at 51 years of age) is hard.  I saw my weight loss doctor and nutritionist for my 18 month check up, and they suggested I do a reset.   The reset is titled “Getting Back on Track!”, and I began on Monday.  I am doing a liquid fast (juices, jello, no protein shakes or solid foods) for at least two to three days.  I didn’t want to start it before Thanksgiving or the Bestie weekend…so three weeks from Christmas I begin again.

I hadn’t been exercising either.  So Monday, got up (later than normal but got up), and walked on the treadmill for 20 minutes.  Not great, but it is a start – again.  David and I are signed up for the 5k that we did a year ago.  I had high hopes for cutting down my time, but now all I want to do is be able to finish again.

It is frustrating how easy it is to lose track of a habit that benefits me.  I love the effects the weight loss surgery has given me (a great tool), but it still takes effort and work.  Nothing is easy (apparently putting the weight on is!), but I know that I am not perfect and the baby steps have begun again.

Journey to healthy…again.

Distance

Don’t compare your progress with that of others. We all need our own time to travel our own distance.

A friend on Facebook posted this today.  A good reminder for me today in many areas of my life.  For me not to get anxious about math, our children and their path, or my weight, or whatever in general I think that needs to be done.  No one measures my distance but me.

Bacon

The only way to cook bacon is to bake it. No splatter, remains crispy.

Line a sheet pan with aluminum foil, place the bacon in a single layer on the pan.  Bake at 350 degrees for 30 minutes or until the bacon is done to your liking.

This is always perfect! And, we love bacon.

One-Pot Cheeseburger Pasta

I am scrolling through Facebook the other day, and came across this Tasty post with four different meals you can do with hamburger.  We are stretched a little tighter this time of year, and we have hamburger in the freezer so I thought I would give it a go.

Ingredients

for 6 servings

  • 1 lb ground beef
  • 1 cup onion, diced
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons ketchup
  • 4 cups beef broth
  • 16 oz fusilli pasta
  • 3 cups shredded cheddar cheese
  • ½ cup milk
  • green onion, sliced, to serve

 Preparation

  1. In a large pot over a medium heat, add ground beef, onions, garlic, salt, pepper, worcestershire sauce, and ketchup. Break up the beef to incorporate the seasonings and cook until browned.
  2. Pour in the beef broth and bring to a simmer.
  3. Add the pasta and simmer for 20 minutes or until the pasta is cooked throughout and the broth has cooked down.
  4. Pour in the milk and cheese. Stir until the cheese has melted.
  5. Serve garnished with some sliced green onions
  6. Enjoy!

I used chickpea pasta instead of regular pasta – and that was my only substitution.

It was a hit!  Stephen loved it, as did David.  I could eat 3/4’s of a cup.  Not bad really since it is with protein pasta.  I think the flavors needed more a kick, but the boys liked it so that is really all that matters.

18 Months

Wow…it seems like forever ago that I had my Gastric Sleeve Surgery.  Then again, it seems like yesterday.  It is much harder to work at maintaining especially now with my gain of eight pounds.

I had my 18 month check up Friday. My doctor was concerned about the gain, as am I.  I do not want to go back there.Stephen has this picture hanging up in his room.  I thought I looked good at the time.  It was a good picture of all of us.  I have a fear of this.  I know that I can’t get there quickly, but it will creep up on me if I am not careful.  I know the gain I have had is directly linked to the lack in my planning of meals, or my exercise.  It shows.

So as I said yesterday…resetting my focus.  Reclaiming that I can do this, and will with God’s grace.  Having the support of my nutritionist in what I want to do with my diet, I plan on beginning after Thanksgiving.  I don’t want to start only to set myself up for failure.  Planning my meals and exercise will be the key to my daily success.

I have a month to get off 4 pounds, and have my follow up appointment with my nutritionist.  (Realistic goal – 4 pounds; would love to have all of the regain gone at 8 pounds!)  David and I will be gearing up for the Ho Ho Hustle 5k on December 9.  So exercise is a must to beat my time from last year.

Side note:  I am continuing to take college courses (YAY), and will be taking Nutrition next semester.  It will count as an elective in my AA, but for me personally, something I have had a long desire to learn.  I have a want to relearn what is healthy, and how to be healthy in everyday life.  I think it will benefit my family as well, well hopefully.

Pretzels 

Another one of the German box mixes in the GermanFoodbox.com subscription was the German Pretzel Mix.  This one was more complicated but wonderful.

Prepared the mix per the instructions (mix flour and yeast with warm water, mix with a dough hook), and let rise.I kneaded the dough, and shaped.  This was the difficult part.  I was not schooled in making pretzels, and it was apparent! Baked, and this was the result.  The flavor and texture were good.  The appearance was lacking…but again, yummy!

Had two bites with unsalted butter – memories of Germany.  Loved trying this, but not sure that I want to make them again.   It was a fun trying to make them.

Blueberry Streusel Pie

David and I subscribed to the German Box monthly delivery for a couple of months to see what they would send.  We received some different items, but mostly box mixes of stuff I used to love when in Germany.

One of the items they sent was the Kathi German Streusel.   I had a can of blueberry pie filling, and wanted to give it a try.


I followed the instructions on the box.  Although it says to use a spring form pan, I used a pie plate.  But the mix came together really well.Sprayed the bottom with non-stick spray, and pressed in 3/4’s of the mixture to the bottom of the pie plate.I didn’t just want a blueberry pie.  I wanted something a little more German.  I used 1/2 cup of sour cream, an egg, and 1/4 cup of granulated sugar – mixed it together and poured in the bottom of the crust.Then I dropped the pie filling onto of the cream mixture.Again, followed the instructions to use the rest of the streusel mix to the top.Bake at 350 degrees for 45 minutes or until a toothpick comes out clean in the middle.Let cool, and enjoy.  (Refrigerate after completely cool.)

It was so yummy.  As like most German desserts, it wasn’t overly sweet.  The sour cream mixture made it creamy, and cheesecake like but without the density.   I will definitely make this again.  I have Googled where to purchase the cake mix, and hope to get it again before Christmas.
