Shrimp Cauliflower Fried Rice

Shrimp Cauliflower Fried Rice

The other day, I cooked the Chicken Cauliflower Fried Rice using Katie Lee’s recipe at the Food Network.

So, I was craving it again, but I had shrimp, and sugar snap peas.  It turned out just as yummy as the chicken, but I think I like this one better.

The preparation and set up was the same.

I partially cooked the shrimp.

Then processed the garlic, ginger paste, and vegetables like before.

Added the shrimp back in when the vegetables were soft.  Also, added the cooked egg.

We still had some egg rolls left, so I served it with those.  I really liked the freshness of the shrimp with the sugar snap peas, and carrots.

 

Everyone gave it yummy reviews.

Happys

Happys is a term I use when gifting.  A Happy is just that…I thought of the person, and thought they would like this happy.  Simple.

I ordered an assorted set of cookies from Cheryl’s Cookies.  They are buttery, not too sweet, and super full of flavor.


Where I work, we host a kids summer camp.  It gets really crazy before the first two week session.  Our maintenance staff does so much for us, that a simple thank you just doesn’t seem to be enough.

Cookies?  A basket full of assorted Cheryl’s cookies says a little more.  Happys. Everyone deserves a happy every once and a while.  Just a little something that says thank you; I was thinking about you; or just ’cause.

Dropping

With all of the change I will be experiencing in the next month, we decided to drop my summer classes.  I wasn’t doing well with the online math class due to losing focus.  I need the structure of a classroom.  I am too new to this back to school thing, and admitting that I can’t do it right now is good.

I am enough.  To say no is okay.  I am very emotional about this. Right now really defeated.  But Fall is just around the corner.  And I will conquer these classes then!

Weekly Shots -Update

Last week I saw my Rheumatologist, and we decided to take me off of the Methotrexate shots.  I had been experiencing too many of the side affects, and really felt the need to get off it.

Really won’t see the benefit until a couple more weeks go by, but excited that my immune system can recover.  I would really like to see how my body is without a lot of immune suppressing drugs.  One day.

Again, hopeful.

One thing in life that is constant is change.  My dad always said this.  Most of the time, I am okay with change so long as I am in control of it.  Ha, who isn’t, right?

We are going through some major role changes at work with new leadership, and at first I was shocked, then sad, and ended up excited.  The next morning, completely overwhelmed, then angry at the rumors.  Last night, I was completely excited again remembering that this is new, different, and challenging.  I love that.  I love being told I can’t accomplish something.  Bring it, right? But still scared of the change.  The unknown.

So the definitions list above are to remind me that the small, little word “change” can mean lots of different things to different people.  I am in the midst of change at work, with being back in school, becoming an empty nest home, and my weight loss.  Lots of change.  So I leave you with these:

Crafting Stool

I finally found my crafting stool.  We ended up buying it at Amazon.  We only spent about $50.00, and it is the perfect height.  I still haven’t really crafted or even organized under the table yet, but I have my chair!

Magazines 

Another one of my indulgences are magazines. I love them. I used to subscribe to many of them, now I just pick up one or two when I am at the store.


I keep them in a basket by my chair, and will read them and then reread them.

I love them.  I used to get them on my tablet. It really isn’t the same as flipping through the pages.
