Craft Room – Part 2

Progress, right?  The window wall is the darker of the two shades of grey that we chose.   It seems that we always take pictures later in the day.  I will try to be better about the pictures.  But, I love the contrast of the colors with the bright white of the doors, and trim. David is doing all of the work due to my schedule with class and work.

More to come, just wanted to show the update so far.

Meatball Sandwich

We had leftover meatballs in marinara sauce, and I had the thought of getting some type of rolls to make sandwiches.   I can’t eat the bread, so it was for Stephen and David.  David loves the meatball sandwiches at Subway, so why not? I sliced the bread in half, heated up the meatballs, and placed them in the middle, covered it in mozzarella cheese.  Broiled them until toasted.

They loved them.  Super easy, resourceful, and we finished the meatballs.  I just had meatballs with cheese on them without the bread.  I could only eat 3 1/2 of the meatballs, but it was yummy to have the cheese.  Felt like I was cheating.

I loved that we were frugal with this meal as well.

Sauteed Spinach

I have been addicted to sauteed spinach since surgery (well, when I was able to add vegetables to my daily intake).  It is easy to make, and easy on my stomach.  Basically I cheat with the garlic and use jarred minced garlic.  I also get a large tub of baby spinach as it keeps well in the refrigerator.

I add about a spoonful of garlic and two tablespoons of olive oil to a hot pan.

Then add several handfuls of spinach.

I add some salt and pepper.  Stir every couple of minutes until the spinach wilts, and the garlic turns a little brown.

I store the sauteed spinach in the refrigerator to use whenever I eat dinner for the week.

What is your go to vegetable?  I love that this only takes about 3 minutes total to make from start to finish.  Even if you use a fresh garlic bulb, mincing that would only take a minute or two max.

Super yummy, and simple to cook.

Walk

Walking.  I am trying to make walking a habit.  I love it when I actually go and do it.  It is just getting out there to accomplish it.  Habits take 21 to 30 days to form, right?  That’s what the experts say anyway.  Trying.

Yesterday evening, David and I decided to walk downtown Fort Walton.  I love this walk. We were going to follow the route for the 5k that we did in December to see if we could improve our time.  We decided, as we were walking, to go over the Brooks Bridge.   I was apprehensive because we had Dexter with us.  Well, and just in general as it wasn’t what we planned.  But I did it.

We got up to the top of the bridge, and David stopped to take these pictures.imag1133imag1135

What you don’t see is the traffic, the bridge bouncing, and wind blowing.  I couldn’t stop as I was handling Dexter, and really didn’t want to stop.  I love this view.   I love that this is where we live.   We got to the bottom, and went under and back over the bridge on the other side.  We did better on time than I thought, and it was a really good elevation for us to do.  Legs were feeling it.

Legs.  I have lots of skin issues with the weight loss, and need toning (in addition to more weight loss).  I really just want to be healthy.  I like where my body is headed, but don’t want to stop being active.  I knew that there were going to be skin issues.  And I know that my body is still changing and adjusting.  I just want it to look different now.  (Everything in its own time, right?)

This walk was perfect.  Tonight we are going to walk it again without Dexter, and hopefully improve our time.  Maybe I won’t be as anxious since we already walked it, and I know what to expect.

Doctor Office

I have been experiencing more anxiety in the past couple of months. I scheduled an appointment to see primary care doctor on Wednesday last week. She is amazing, and the pictures below are wall decor in the room where I was seen.  This says everything you need to know about her.  Genuine care giver.

She loves taking care of people, and doesn’t just prescribe a pill.  I have been doing some Young Living Oils (lavender, and tranquility), and they have helped.  Trying some other home methods to calm my spirit, and having a doctor listen, and understand helped even more.

I am having more stress than I was aware, and she did prescribe a take as needed (not everyday) pill for me.  We all struggle at different times I think.   It is nice to know that I can take something to help calm me when it gets to be too much.  It was encouraging to know that I am not alone.  More of us struggle with anxiety than we are aware.  Having a doctor that cares really does help.

Lobster Tails and Asparagus

Reminder that we are on a budget…and don’t really celebrate Valentine’s Day.  But we had gone to Whole Foods and gotten two packages of lobster tails to treat one another this past weekend.  They were on sale (which is the main reason we got them).

We also got a package of fresh asparagus.  I love roasting vegetables.  The nutty flavors come through with broccoli, carrots, and asparagus.  If they are bitter, I like to add garlic or a purple onion on the roasting pan to sweeten the vegetable.  These asparagus didn’t need anything but olive oil, salt and pepper.

For the lobster tails, we split the tail with scissors.  Added a pat of butter, parsley, and season salt.  Placed on a sheet pan covered in foil and broiled for about 12 minutes.

I thought I would do something special since we are still new to this empty nest of ours.  It was very simple, our regular plates, and silverware.  Just added place mats, cloth napkins, and candles.

It was a nice evening, without children.  We shared doing the dishes.  It was really nice.  Then I did some homework. Ugh…but we had a nice dinner in.  Simple, but so nice.  I think we should eat at the table every night.  After tonight, I think we will try to at least once a week.

Valentine’s Day

Happy Valentine’s Day!

I got these flowers from David a week after Valentine’s Day last year.  Aren’t they beautiful?  He likes to surprise me, and not to be told when to send flowers.  We don’t celebrate the holiday or make a big deal out of it.  Never have.

This year we decided to treat ourselves to a special dinner that we will both cook.  We went to Whole Foods in Destin, Florida, last Saturday.  They had lobster tails on sale.  Sold!

I am super excited by cooking them, however, not sure what to serve with them.  Everything is an adventure, right?

Waffles, Bacon and WLS

Yesterday morning (Sunday) David states that he is wanting waffles.  He is the house waffle/pancake maker.  So I thought…YAY! Waffles, crap, I can’t eat those.  Then I remembered my protein mix.  I had made pancakes before with the Kodiak Cakes mix, why not try waffles.

David added an egg to the mix for added protein.  My serving below.

I ended up eating more of it than I thought.  I was drier than a regular waffle, hence the extra syrup.  Yummy.

It was a good Sunday.

Budget

Well, we have not been the best stewards of our money, and have really put fourth the effort not to eat out a lot, or purchase anything unnecessary since the first of the year.

We are trying to snowball our debt (too much to note here), and so far it is going well.  David and I have been strong with one another.  With Stephen moving out, it has been a bit easier with groceries, and not over purchasing.  I am trying to meal prep on the weekends.  Mainly cooking the protein for the week.

So far, meal preparation has been the best thing.  It keeps us from going out because we have something already prepared. I will be posting more about the meal prep and menu planning later in the month.

What have you done since the new year?  Walking, eating healthier, budget –no spend month?
