Crawfish

One of the best things about the Mud Bug 5k is that they were serving 2lb crawfish and shrimp in togo containers for a discount.  I love these crawfish tails.  I used to be able to eat at least one of these containers with extra corn and potatoes.  Now, barely half, and none of the potatoes and corn.  

David was the recipient of the potatoes and corn.   And I know that I ate way too much, but it was super yummy and it will hold me over for a while anyway. Getting back on track with making sure of the right amount of intake is the goal for the week.

Mud Bug 5k

Last Saturday, David and I participated in the Emerald Coast Crime Stoppers Mud Bug 5k.  It is a great fund raiser, and got in another try at a 5k.  It was hot, and I hadn’t been working on my time or walking in general.I finished at 52:35 which was a minute less than the Lucky Leprechaun 5k that we did in March.  Again, just to be able to complete it is so much more than what I would have thought a year ago.

So only one more to do for the year to reach my 5k goal (3 this year total).  I think we will end up doing 5, but not going to jinx it.

Baths

I love taking baths for relaxation.  I used to have to have help getting in and out of the tub. My non-surgery victory lately has been I can get down into the tub and pull myself out of the tub with not one ounce of assistance.


The first time this happened I cried. I tend to leak from my eyes more often these days, but that’s okay.

Pictures and WLS

A year ago with family at Easter.

And this year, just Carmen and I.

Pictures are a wonderful thing for anyone going through weight loss, or any change for that matter.  I still don’t see a lot of my weight loss when I look in the mirror.  I see it more in the things I am able to do.

Like today’s Mud Bug 5k.  I will update you later this week on how that goes.

Greek Cous Cous

I needed a simple side to take over to the in laws for a birthday dinner.

I got some dried couscous, and some Greek feta salad. I had the idea to mix the two. It worked!!

I placed the Greek Feta Salad in a large mixing bowl.  Cooked the Cous Cous per the instructions.  Added a small, sauteed onion.

Let cool just a bit, and then mixed together.  I really enjoyed it, as did Carmen.  David wasn’t a big fan, but he is a lover of potatoes.

I had enough to serve on Easter, and even gave some to friends.

Ham & Asparagus

A couple of other dishes for Easter were roasted asparagus, and smoked ham (in the crock pot).

 

I love this way of cooking vegetables.  It turns them to a nutty flavor, and somewhat smokey.  Just olive oil, salt and pepper.  Bake on 350 degrees until tender (about 25 minutes).

The ham was done in the crockpot for 3 hours on high, with 12 ounces of orange juice, and 1 cup of brown sugar.  Made a slurry (mixed it together and pour over the top of the ham.

I really enjoyed the way this was plated.

Grilled Lamb Chops

Growing up, we always had lamb for Easter.  David isn’t a fan, but Carmen had requested it, so …we had some lamb.

I marinated two large lamb chops in olive oil, 4 cloves of garlic sliced, rosemary, and salt and pepper.

 

Grilled inside on each side for about 8 minutes each due to the thickness.

I rested the meat for about ten minutes.  Carmen enjoyed her chop, and I had part of the other chop.

My plate.  I had too much Cous Cous, but overall a delicious Easter lunch.

Beach Therapy

I live in Northwest Florida on the Emerald Coast.  I don’t live on the water, actually about 15 minutes away from the beach.  I don’t go as often as I would like, and it seems that the weather doesn’t always cooperate with me.

Friday was perfect.  It was going to be a busy week, and I knew that I needed to clear my head.  It was windy, but perfect.  The water was still cold, but warm enough to cool off.  Not a lot of people.  Just the sounds of the waves, and birds.  Really nice.

My kind of therapy.

Easter…continued

David, Carmen and I went to church yesterday morning at 8am.  I have so missed church.  Just the fellowship of worshiping our Risen Savior.  It is one of my favorite holidays, just so humbling.  Carmen went with us, and we attended with David’s parents (super nice).

I got a half ham at Publix (already sliced), and planned on having the kids over for dinner.  Had the ham in the crockpot, and came hone to prep everything.  (in another post)

I know that things have changed for us, and had planned on Stephen coming over for dinner if not for church.  Okay-  8am church was not going to happen.  But really didn’t think that he just wouldn’t show for dinner or anything until his sister tempts me to post something on social media.

We always post a silly picture of the baskets especially since they are older.  

Well this got a reaction. From everyone apparently.  So he ended up showing up for about 20 minutes for fear that I would really not give him his basket goodies.  I don’t like poking, but apparently I do that a lot.

I wanted my kids around.  To enjoy the Risen Lord.  We have always spent this day together, and sometimes with other families.  Today was so different.

Sad for me.  Weird for the rest of the family.  I was sad, not happy that everyone wasn’t here.  I was mad that Stephen just came over just to appease me.  I hate that I had to poke him to get him to come over.  I don’t like that part of me.

I will be doing some self examination in the next few weeks.  I didn’t like how I acted and reacted today.

I failed today.  I fail everyday in some way or another.  Who doesn’t?  Did you fail today?
