“Jesus did many other things as well. If every one of them were written down, I suppose that even the whole world would not have room for the books that would be written.” – John 21:25
If we were to list everything we did well, would we believe it? Do we doubt ourselves too much? Why is it if we do something well so hard for us to believe it in ourselves? In others? Doubt.
There should be thousands of stories of Christ in Bible, and we should believe all of them. We have to convince others to believe the ones that are there, let alone the ones that aren’t.
How many things do you feel you have to convince yourself to believe on a daily basis. Is that really true, especially in today’s media environment? So many things can be manufactured by individuals that look real – are the real? Do things have to be held in your hands to be real?
Just my thoughts for today…believing in many things…sight unseen.
Blessings!

It was a quick marinade, tangy and not too spicy. I really enjoyed it. If you like Kimchi, you can find powder mixes at your local Oriental market. Mix it with some rice wine vinegar and your favorite vegetable—Kimchi!

Whip together an egg, and some water (not much) to create an egg wash. Dip the avocado slices in the wash to coat, then in the Panko mixture. Press down slightly.
Place on a baking sheet – spray first – and bake for 20-25 minutes at 350 degrees or until crispy.
I must confess, I didn’t like these at first. Maybe because I wasn’t sure what to expect. But after a bit, I really did enjoy them. I will make them again, and adjust the amount of ground flax seed, and longer baking time as I like things crunchier.

Thinly sliced, and removed the majority of the fat from the loin.

Sautéed bamboo shoots, then added the veges.

Crazy wind (surfers were loving the waves) and hair, but I love our beach.
He hates the beach, and I love it. We compromise by going to dinner at the beach and not touching the sand! Ha! (We took this picture on the Boardwalk–not on the sand.)
