Bucket List-Algebra

I can now say that I have conquered Algebra!  I received my final grade of “C”.  I will take it.  I so struggled with this.

I knew the material, just really struggled with the tests.  Overall, I did well.  I am so thankful it is done.  The anxiety with the tests was really overwhelming.  I tried my oils, medicine, and breathing techniques.  I still found myself staring at my test with – uhm – what is this? I LOVED this from Carmen.  My family has been incredibly supportive.

I have made it a goal to take six courses (two classes per semester) in 2018 beginning with Statistics (math again), and Nutrition.  I am not looking forward to the Statistics course, but I am the Nutrition course.  I think if I can get through this next math, I will be okay in school.  I know that I will struggle, but just looking forward to learning and growing.

So onward, right?  Happy to have a break for a couple of weeks.

Bacon Quiche

Original recipe found at Pillsbury.com.

1 Pillsbury™ refrigerated pie crust, softened as directed on box 
1 cup half-and-half or milk
4 eggs, slightly beaten

1/4 teaspoon salt
1/4 teaspoon pepper
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss or Cheddar cheese (4 oz)
1/4 cup grated Parmesan cheese
1 tablespoon chopped onion
1/4 cup chopped cooked broccoli
Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.  In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.
Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.
Couple of modifications with the broccoli, but absolutely love this.  David and Stephen enjoyed this as well (probably the bacon!).

Ho Ho Hustle Part 2

Ho Ho Hustle 5k is today.

The low is supposed to be below freezing, and the high only 44.  Last year was cold as well. It was 35 degrees when when finished.

That was my first Walking 5k that we did last December.  I hope to beat my time of 59:43 this year!

I DID!! 54:22!!!! Not my best but so happy!!

Lunch

My Mom used to eat canned, sliced pears and cottage cheese together all of the time for lunch or a snack.  I crave it every once and a while.  Today is one of those days.

Firecracker Saltines

I made these years ago when I had them at church potluck and had to have the recipe.  I loved them, and they are highly addictive.  (Not good for a reset week – but we are having a potluck a work today, and made these last night.)  These pair well with my pimento cheese or on their own.

Ingredients:
1 cup canola oil
1 packet Hidden Valley Ranch (dry)
3 teaspoons of red pepper flakes
4 sleeves saltine crackers

Instructions:
Place sleeves of crackers into a large Glad container.  In a bowl, mix oil, ranch dressing mix, and red pepper flakes.  Continue to stir the mixture. You don’t want the red pepper flakes to settle.  Drizzle the mixture over the crackers.  Put lids on the container and turn upside down every 5 min. for 30 min.  Will keep for up to a week.
