Everything is better with bacon, right? Shrimp. Basically, shrimp with a 1/4 cut piece of bacon, wrapped and secured with a toothpick.
And smoked oysters (drained), wrapped with a 1/4 cut piece of bacon, secured with a toothpick.
Place on separate pans of baking sheets, covered with aluminum foil. Bake at 375 degrees for about 30 minutes (shrimp might not take as long) or until done.
So good…you can serve these as is, with your favorite sauce, really doesn’t matter, because…bacon. Ha.
Enjoy.

On Wednesday’s we wear pink!

Geoffrey Zakarian showcased this recipe on the Kitchen. I didn’t follow the recipe completely, but it turned out really nice.
I varied the recipe with what I had:
1/4 cup extra-virgin olive oil
1/2 onion, chopped
4 cloves garlic, finely minced
1 cup olives, pitted
1 cup white wine
1/4 cup capers
6 artichokes (from a jar stored in water)
1 to 2 cups of marinara sauce
Kosher salt and freshly ground black pepper
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
Heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until soft but not browned, about 5 minutes.Â
Add the olives, white wine and capers and cook about 2 minutes. Add the artichokes, and stir.  Place in a oven safe dish.
Preheat the oven to 375 degrees F. Add about two cups of the marinara sauce to the top of the mixture. Bake for about ten minutes then drop dollops of the ricotta cheese on each artichoke, then top with the grated Pecorino.

Bake in the oven covered for 20 minutes. Uncover and bake until golden brown, about 25 minutes.
I really thought this was going to be salty, but it wasn’t. The ricotta made it creamy, and the white wine, and olives made it tangy. It was good.
David didn’t think he was going to enjoy this dip at all, but he did. So, I think I will make it again.

Living in Florida I miss a true Fall feeling, however, when I see October 1 on the calendar, I feel joy.
I love Anne of Green Gables, and this is one of many of my favorite quotes from the book. It was an appropriate feeling for me growing up in NW Arkansas. Falls there are a true Fall with yellow, orange and browns in the trees, the cool mornings and nights. A true Fall.
There isn’t the Fall crisp air, or the turning colors of leaves where I live but it is October. It brings bittersweet memories, as this is the time of year that I truly miss living in a place with four seasons.
Which season is your favorite?

“Faith is as sure as the taste of an apple, the fragrance of a rose, the sound of thunder, the sight of the sun, the feel of a loving touch. Hope is a wish, a longing for something not now possessed, but with the expectation of getting it. Faith adds surety to the expectation of hope.”
I have been wanting to get a tint on my brow and lashes for a while now. I finally did it last Saturday! My before picture with no makeup. Â
Again no makeup, but my after!! So excited. I won’t have to bother with a makeup pencil or doing anything with my lashes. This is huge for me especially due to my Sjogrens (my eyes are extremely dry and wearing makeup increases the dryness). This next picture was immediately after having the tint done. I didn’t want to wash it for a while as the longer you wait the LONGER it will last.
And then after washing my face, and again with no makeup!!Â
Super happy! I didn’t have to spend time in my brows, or feel like I have to wear eye makeup just to feel put together.  This may only last a month or even a few weeks, but so worth it for me.
What is something that you do just for you that makes you feel wonderful?
Blessings.
