One of the things that David ordered every night on the cruise was French Onion soup. So I thought I would try to find recipes with the same type flavors to cook for him once we got home. I found this recipe at Home Chef and decided to give it a try. We didn’t make the salad, but I copied the recipe completely from their site for your information. Our pictures are at the bottom.

Peel and halve onion. Slice onion into thin strips. Stem thyme. Halve tomatoes. Pat chicken breasts dry, and season both sides with a pinch of salt and pepper.
Place a medium non-stick pan over medium-high heat. Add 2 tsp. olive oil and onion to hot pan and spread into a thin layer. Reduce heat to medium and cook undisturbed, 3-4 minutes. Season with a pinch of salt and pepper. Stir often until onions are a deep golden brown, 5 minutes. Add thyme and sherry wine (not vinegar). Cook until wine is evaporated, 2-3 minutes. Transfer onion to a plate and set aside. Wipe pan clean and reserve. While onion caramelizes, make vinaigrette.
Mix panko and ½ tsp. salt on a plate. Add a chicken breast to panko and coat completely, pressing firmly to adhere. Shake gently to remove excess breading. Repeat with second chicken breast. Place a medium oven-safe non-stick pan over medium-high heat. Add 1 Tbsp. olive oil and chicken breasts to hot pan. Sear on one side, 2-3 minutes.
Flip chicken, and place pan in oven. Roast until chicken reaches a minimum internal temperature of 165 degrees, 9-11 minutes per side. Carefully, divide onions between chicken breasts and cover each with cheese. Return to oven and roast until cheese melts, 2-3 minutes. Remove from oven and rest 5 minutes.
Combine sherry vinegar and 1 Tbsp. olive oil in a mixing bowl. Season to taste with salt and pepper. Add arugula and tomatoes to mixing bowl with vinaigrette and toss to coat completely. Plate dish as pictured on front of card. Bon appétit!
Ours:
Chicken breasts (they were huge, so we cut them up, patted dry, coated in panko) seared in some oil.
Caramelized the onion (only used one large yellow onion – will use more next time).
Followed the instructions for the chicken, the covered the chicken with the onion, the the cheese.
Baked until the cheese was melted, and gooey.
This was really good. The flavor was spot on, although we both think it needs more salt and pepper —we both loved it.

I work with a group that participates in a leadership group with the community. On Friday, we toured one of our local cities, and I had the privilege of getting to know one lady a little bit more.
We all self doubt. You all know that I do on a daily basis. We had a couple of conversations on Friday that confirmed that even in the leadership group, she self doubted. She felt as though she couldn’t, or shouldn’t lead. She has even gone to her supervisors and asked what she needed to do to improve her leadership skills and they told her to self evaluate.
She is so encouraging, works 3 (three!) jobs, and has a family of 6 (yes, six!!). She is constantly posting on Facebook encouraging, and motivating things, yet she feels like she shouldn’t be part of the program.
So, again, I felt as though I needed to talk about self affirmations. What we say out loud to ourselves is huge! HUGE! We believe what we say to others…if it is always negative, it will be negative. Watch what you say to others. Be sure to be encouraging, especially to yourself.

to blog on Friday…
Yep…completely got away from me…and I thought I had prepared enough for the week. Apparently not. So this is for Friday.

So…blessings for those who forget, and for those who don’t.
One of the many auto-immune disorders I have is Sjogren’s Syndrome, and April is its awareness month. I won’t fill the month with information on it, but wanted you to be aware of some of the many symptoms people may suffer.

I know that if I step out of my comfort zone, as safe and secure as it may be, I’ll grow as a person and learn more things. One of my professors is not only having me add people in my potential career field that I don’t know on LinkedIn, but also message them. And ask them to get coffee and chit-chat. Basically, “network”. I LOVE talking to people, but not when there’s pressure. This person may get me a job? What am I going to talk about?? What if I talk too much about myself or make too much eye contact and they think I’m weird??
This exercise is going to help, I know it is. I need to get over my somewhat irrational fear of thinking that I’m bothering someone when I don’t even really want to ask about potential jobs (note: it would be cool and I am accepting offers post-grad), but honestly I just want the information about what they do and how they got there. But they have no clue who I am or why I would care, so I’m going to have to make the first move.
