Sautéed Scallops

Okay… I love Gordon Ramsey. We had frozen scallops (first fail I am sure), but I have been wanting to try his recipe.

Pat the scallops dry.  Season with salt and pepper.  Place oil in hot pan.

Place them individually clockwise in the pan with the “fatter” side down.

Cook until browned on bottom (about 3 minutes).

For one set of scallops we added a tablespoon of butter, and a thyme stem.  It definitely added flavor.

Drain on a paper towel, and enjoy!

One batch we did without the extra butter but with the thyme, still yummy.

Chickpeas

I needed to make some snacks that would incorporate my healthy changes.

Prepping for the week so that I plan to succeed. These are simple and a tasty snack on their own or on top of salads.

One can of chickpeas, drain and rinse until bubbles are gone. Dry on paper towels.

Put onto a baking sheet. Drizzle olive oil, and sprinkle cumin, cayenne pepper and paprika over, and roll to make sure they are evenly coated.

Bake in a 400 degree oven for about 25 minutes or until crispy.

Sprinkle with coarse salt. Store in an air tight container. These will spoil quickly. I store mine in the refrigerator.

Lunch Prep

I planned and prepped for the week for lunches and snacks. Will post recipes for chickpeas, cheese crisps and salad dressing throughout this week.

Plan your work, work your plan.  Right?

So rotisserie chicken, spinach, cheese crisps, chickpeas, antioxidant dressing—and protein balls.  We can do this!!

3 Week Lunch Prep Challenge

I found this on challenge, and have decided to participate.  You can sign up at sweetpeasandsaffron.com, or just to find out more information.  Basically, Denise is going to show me how to prep 4 days of lunches during a live video on Sundays, and we can modify it to our dietary needs all you have to do is sign up as it is free.

Chicken Breast Supreme

Over the holidays, I have a tendency to want to eat memories.  This is one of those recipes.  Although, haven’t remade it, I believe it needs more seasoning.

Ingredients:
2 cups Sour Cream
1/2 teaspoon lemon juice
4 teaspoons Worcestershire Sauce
4 teaspoons celery salt
2 teaspoons paprika
3 cloves of garlic, minced
4 teaspoons salt
1/2 teaspoons pepper
6 whole chicken breasts
2 cups fine dry bread crumbs (we used panko instead)
1/2 cup butter

Directions:
Combine sour cream, lemon juice, Worcestershire Sauce, celery salt, paprika, garlic, salt and pepper.

Dip each breast (pat dry) in sour cream mixture, coating well.

Refrigerate overnight, covered.  Remove chicken from mixture and roll in bread crumbs.

Arrange in a shallow pan.  Melt butter ad spoon over chicken.  Bake uncovered at 350 degrees for 45-60 minutes.  Spoon rest of butter over chicken and bake 15 minutes longer or until brown and tender.

It was good, but really needed something more.  We will rework this one.

2018 Goals

I have decided to continue blogging daily.  I never really thought I would be able to do it every day in 2017 but I did.  I had help from family, and lots of encouragement from friends.  I pre-scheduled most of my posts throughout the week and as I would have time to write on the weekend.

I have also decided that this is the year for me to conquer six college classes, and to continue to my goal weight.  It will be busy starting back to work on today (and Carmen goes back to LSU).  Planning will be the key for homework, meals, and exercise.  My Passion Planner is ready to help, I just have to use it.

Apparently, it can take 18-254 days to form a habit.  Hoping that I can kick into gear and accomplished another 20-30 pounds down this year.  Really not wanting it to take forever, but healthy habits would be a good thing. Regain is thing.  I know that I am not perfect, and can’t do everything. But wanting to be better than where I am.

So goals:

Blog daily–again!

Classes – take 6 this year, and increase my gpa.  Will be okay with “C’s” but…

Weight – get back on track and lose 20-30 – hit goal weight!

Walk – Four 5k’s (beat my time of 54:35)!

Meal plan – plan to succeed—right?

Stay organized, and not become overwhelmed.  Anxiety will not control me this year!

Toffee Crack

These are insanely addictive, and incredibly simple (if you don’t burn the butter and sugar like I did).

1 sleeve of saltine crackers
1 cup packed brown sugar (light brown)
2 sticks of unsalted butter
1 package of semi-sweet chocolate morsels

Line a cookie sheet with aluminium foil, place crackers in a single layer.

Bring to boil the butter and brown sugar, and simmer for about five minutes (be careful not to burn).

Pour the sugar mixture over the crackers evenly (my cookie sheet isn’t level, so all of the toffee went towards the middle).

Bake in a preheated oven at 350 degrees for about 5 minutes for the toffee mixture to soak. Remove from the oven, and sprinkle on the chocolate chips. Let melt (place back in the oven if needed, but again, be careful not to burn the crackers). Spread the chocolate evenly.

Let cool. I placed mine in the freezer once they were cool to help set them.

Sandies

I talked about this recipe yesterday.  I loved making them.

Sandies

1 cup unsalted butter (2 sticks)
1/2 cup sugar
2 teaspoon water (cold)
2 teaspoon vanilla or rum extract
2 cups sifted all purpose flour
1 cup chopped pecans (very fine)

Preheat oven to 325 degrees.  Cream soft butter and sugar (about ten minutes).

Add water and extract.  Mix well.  Add flour until thoroughly mixed.  Stir in pecans.  Chill three or four hours in the refrigerator.

Shape into balls or fingers.  Bake on un-greased cookie sheet in slow oven (325 degrees) for about 20 minutes.

Cool slightly, roll in confection sugar.

Bacon Quiche

Original recipe found at Pillsbury.com.

1 Pillsbury™ refrigerated pie crust, softened as directed on box 
1 cup half-and-half or milk
4 eggs, slightly beaten

1/4 teaspoon salt
1/4 teaspoon pepper
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss or Cheddar cheese (4 oz)
1/4 cup grated Parmesan cheese
1 tablespoon chopped onion
1/4 cup chopped cooked broccoli
Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.  In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.
Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.
Couple of modifications with the broccoli, but absolutely love this.  David and Stephen enjoyed this as well (probably the bacon!).
