The Telephone Booth

Crazy.  Something I grew up with, used once or twice, in a paper that I never would think had ever heard of my little town.

I love the Sunday edition of The NY Times.  Where I live now, there isn’t home delivery.  I would so have it every Sunday, and read it all week.

My little town of now 4,600 people (when I was there the population as 1,750 at most), is in the paper. And not just any paper but the NY Times!!!

It is a great little town.  I loved it then. Miss it now.

Time

Time does heal all things, right? It has been eight years since my Mom passed away (yesterday, February 8th), and it doesn’t get any easier.

In fact, there are times, especially today, where I think it is worse.

I see my two beautiful children growing into responsible, (well – almost) beautiful adults.  I want my Mom to see that.  I want her to see every step they take. Bake her wonderful chocolate cakes for birthdays.

Everyone close to me still has their parents, and in some cases, grandparents.  That is so foreign to me. They are sympathetic, and try to understand. But they really don’t.  Death has been a part of me for so long, with so many of my loved ones that I am certain no one understands.

I just miss her. All of her, the yelling German to the sweet Mom who would just sit and brush my hair.

Oh, how I miss you Mom.

2014

Well, as I sit here, smelling the sauerkraut cooking (recipe is on blog), I am happy. Happy that 2013 was kind to me, us. We had some major bumps, but overall have survived.

I am ready for 2014. Ready to cook more, blog more, and get this weight to something normal. Normal.

My symptoms have come back somewhat, and I am not looking forward to what that entails. But I also know that I must get healthy with or without Lupus.

Are you making any changes? Resolutions?  I swore that I wouldn’t make resolutions anymore, I don’t keep them.

So, say goodbye to 2013. I welcome 2014.

Death Too Soon

Death. Always seems to come to a person too soon. Even when they are in their 60’s, 70’s, 80’s, etc.  But 16 is too soon. Accident. Yes. But too soon.

My heart cries out for the family that lost their son yesterday.  My heart cries for my son who pulled him from the water. My heart cries.

Cries.

It’s that time of year where everyone is wanting corned beef. Here is my go to recipe that I posted in August of 2012. Enjoy!!

Corned Beef.

Sometimes I serve it with noodles, and sometimes potatoes, but I always cook it in the crock pot.

Turns out perfect every time.  This is one of our go to recipes around here.  Perfect for a work day, or on a weekend.

2 to 3 yellow onions thick sliced, and a rib of celery, cleaned and placed on the bottom of the crock pot.
I get the Flat Cut Corned Beef Brisket that has the season packet (makes life a little bit easier).
Place beef fatty side up, and sprinkle the seasoning on top.
Fill the bottom portion with water (to the bottom of the beef).
This time I added fingerling potatoes.
Then top it off with carrots.
   
I rough chopped a head of cabbage, and added season salt in a skillet.
Saute with butter until most of the cabbage is cooked through.

2013 – Memory Verse Time

Well, here we are in 2013…and it is January 1st. Two years ago I tried to keep up with Beth Moore’s Memory Verse.  I did better than I thought, but not near my goal.  So I am trying it again.

So, I have chosen a verse that I need to start out this year:

“I can do all things through Christ who strengthens me.”
Philippians 4:13 NKJV

It is a favorite, but one that needs to remind of starting things in the new year. I should start everyday with this verse, and sometimes do. But today especially.

Stephen and Driving

Stephen finally got his driving permit today. I must say I have been grateful that he waited so long to get it. In our state (Florida) you can get your driving permit at 15, but you have to drive with a licensed driver for a year.  I know that I am getting older, but not dealing with having him drive everywhere has been nice.

He turned 16 on December 2. Yep. Growing up. I love that he is finally able to do this, as I like for the kids to be independent.

I have taught him how to do dishes (although most of the time they aren’t the cleanest), his own laundry, and some ironing. I am thinking of a future where he will not live at home forever.  I know that there needs to be more, but taking it one day at a time.

Whole Wheat Banana Bread

Lisa Leake at 100 Days of Real Food  posted this recipe on her Facebook page the other day.  I had recently purchased whole wheat floor, coconut oil and organic honey for another recipe.

This one sounded delicious and I had all of the ingredients. So I made it.  It is definitely different, and dense.  The whole wheat changes the texture, but all in all a very good, and healthy banana bread.

I calculated the calories to approximately 151 based on 8 servings.

WHOLE-WHEAT BANANA BREAD
INGREDIENTS
  • 2 ¼ cup whole-wheat flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 ripe bananas, mashed
  • ¼ cup plain yogurt
  • ¼ cup honey
  • 2 eggs
  • ⅓ cup oil (I used coconut oil)
  • 1 teaspoon vanilla
 INSTRUCTIONS
  1. Pre-heat oven to 350 degrees F and grease pan.
  2. Whisk together the flour, baking soda, and salt.
  3. In a separate bowl mix mashed bananas with yogurt, honey, eggs, oil, and vanilla.
  4. Fold the banana mixture into the flour mixture until blended. Do not  over mix.
  5. Pour batter into prepared pan.
  6. Bake large loaf for 40 – 50 minutes or until it comes clean with a toothpick.

Shootings in CT

MORGAN FREEMAN ON THE SHOOTINGS YESTERDAY:

“You want to know why. This may sound cynical, but here’s why.

It’s because of the way the media reports it. Flip on the news and watch how we treat the Batman theater shooter and the Oregon mall shooter like celebrities. Dylan Klebold and Eric Harris are household names, but do you know the name of a single victim of Columbine? Disturbed people who would otherwise just off themselves in their basements see the news and want to top it by doing something worse, and going out in a memorable way. Why a grade school? Why children? Because he’ll be remembered as a horrible monster, instead of a sad nobody.

CNN’s article says that if the body count “holds up”, this will rank as the second deadliest shooting behind Virginia Tech, as if statistics somehow make one shooting worse than another. Then they post a video interview of third-graders for all the details of what they saw and heard while the shootings were happening. Fox News has plastered the killer’s face on all their reports for hours. Any articles or news stories yet that focus on the victims and ignore the killer’s identity? None that I’ve seen yet. Because they don’t sell. So congratulations­, sensationalist media, you’ve just lit the fire for someone to top this and knock off a day care center or a maternity ward next.

You can help by forgetting you ever read this man’s name, and remembering the name of at least one victim. You can help by donating to mental health research instead of pointing to gun control as the problem.”

I will not honor the killer.

I will do as Morgan has asked and remember the lost.

Sick

Well, I haven’t been feeling well at all, and was trying to keep it at bay.  It turns out I have bronchitis, sinus infection and borderline pneumonia. Joy.  Having nothing of an immune system doesn’t help.  And now, after a steroid shot (which I like a lot more than the pills – no bitter after taste, or graduating down the script), and a z-pack on the road to recovery.

I have done everything I was supposed to do.  Claritin D for the post-nasal drip. Vapor rub and breathe-right strips so I can sleep at a 90 degree angle. Rest…well, that one, not so much.  Drinking lots of water. And it gets me and hard.

So no IV therapy on Friday.  I am feeling sluggish this week anyway, I think, from doing the garage on Saturday, and was really looking forward to my medication.  It helps so very much in my day to day activity. My stamina, but not my immune system.

Ugh.

Well, rest it is…and soup.  Yes, soup.
