Sandies

I talked about this recipe yesterday.  I loved making them.

Sandies

1 cup unsalted butter (2 sticks)
1/2 cup sugar
2 teaspoon water (cold)
2 teaspoon vanilla or rum extract
2 cups sifted all purpose flour
1 cup chopped pecans (very fine)

Preheat oven to 325 degrees.  Cream soft butter and sugar (about ten minutes).

Add water and extract.  Mix well.  Add flour until thoroughly mixed.  Stir in pecans.  Chill three or four hours in the refrigerator.

Shape into balls or fingers.  Bake on un-greased cookie sheet in slow oven (325 degrees) for about 20 minutes.

Cool slightly, roll in confection sugar.

Sandies-Mom

I have spoken about this before, but this time of year I really miss my Mom.  I crave her presence in everyday things.  I searched for this Sandie cookie recipe, and love that I still have her handwritten card.  Two versions of it apparently.I was able to replicate her recipe (apparently rum extract was the secret!), and it is wonderful. The cookies were perfect, and will post the recipe and directions later.

I miss her.  I miss my Mom, cookies are nice, but it’s not my Mom.

Bucket List-Algebra

I can now say that I have conquered Algebra!  I received my final grade of “C”.  I will take it.  I so struggled with this.

I knew the material, just really struggled with the tests.  Overall, I did well.  I am so thankful it is done.  The anxiety with the tests was really overwhelming.  I tried my oils, medicine, and breathing techniques.  I still found myself staring at my test with – uhm – what is this? I LOVED this from Carmen.  My family has been incredibly supportive.

I have made it a goal to take six courses (two classes per semester) in 2018 beginning with Statistics (math again), and Nutrition.  I am not looking forward to the Statistics course, but I am the Nutrition course.  I think if I can get through this next math, I will be okay in school.  I know that I will struggle, but just looking forward to learning and growing.

So onward, right?  Happy to have a break for a couple of weeks.

Bacon Quiche

Original recipe found at Pillsbury.com.

1 Pillsbury™ refrigerated pie crust, softened as directed on box 
1 cup half-and-half or milk
4 eggs, slightly beaten

1/4 teaspoon salt
1/4 teaspoon pepper
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss or Cheddar cheese (4 oz)
1/4 cup grated Parmesan cheese
1 tablespoon chopped onion
1/4 cup chopped cooked broccoli
Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.  In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.
Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.
Couple of modifications with the broccoli, but absolutely love this.  David and Stephen enjoyed this as well (probably the bacon!).

David’s Thoughts

One of the most important lessons I ever learned involved a LEGO kit, of all things. A few years ago, for Christmas, Jerry surprised me with the LEGO Ultimate Collector’s version of the Millenium Falcon (I have always been a huge “Star Wars” nerd… 🙂 )

As I unwrapped the massive box, I was completely blown away. However, that sense of joy and delight soon became tinged with a bit of distress – this thing was HUGE! Over 6,000 pieces, a 150-page assembly manual. To this day, I remember the sense of complete dismay I felt as I sat on the floor, surrounded by the bags and bags of LEGO pieces that made up the kit. I was absolutely overwhelmed. I looked at the amazing picture on the box, and felt, without question, I would never, NEVER be able to build THAT.

However, if I was going to fail, I decided, I was going to go down swinging. So, I picked up the instructions and read step 1. Piece A into piece B. Okay, so far so good. Then step 2. Then 3. Then 4.

A few hours later, I looked up and realized that I had made visible progress. I still had a long way to go, but I could start to see the outlines of the chassis. The next day, I kept at it. And the next, and the next. Overall, it took me 2 weeks, about 4 hours a day to get it done. But I did.

Sitting back, looking at the completed model, 3-feet long and weighing 15 pounds, I was amazed that I had actually pulled it off. But then, as I thought about it, I realized something important. Something so vital that I have carried it with me since. The most elaborate project can be broken down into simple, achievable steps. Hundreds of steps, maybe, but each single step is doable. Do enough of those steps, and suddenly the project is done.

So these days, when I find myself staring at some impossibly complex challenge, overwhelmed and paralyzed at the scope of work before me, I remember that Millennium Falcon. And then I start on step 1.
